The Rueil Malmaison Central Kitchen Installation

The Rueil Malmaison Central Kitchen is a new modern kitchen using the latest technologies for producing dishes and for managing the whole production process. It supplies 12 000 meals daily to schools in Rueil Malmaison (Parisian suburbs).
To respect food hygienic standards the meals are rapidly cooled leading to high cooling peaks during a relatively short time.
During the design stage, it clearly appeared that the use of the STL had the potential to reduce the capital cost compared to a classical installation without storage.     

The STL was then sized to shave more than 80% of the peak demand. In addition, the STL permits efficient energy management with a very high reliability and important savings on operating costs.

Characteristics

The cooking is done in autoclaves, cooking pots or streaming water systems (type steryflow) at temperatures between 65 °C and 95°C.
The meals are packed in small baskets under vacuum. An initial cooling down to 20°C is achieved with waste water, then a second cooling down to 2°C is achieved with the STL. The meals are then stored in the cold rooms.
To respect food hygienic standards the meals must be rapidly cooled. This introduces high peaks into the cooling profile. The STL is the right solution for shaving these peaks.
